The Warabi Omakase Dining Experience

A contemporary Japanese dining experience, Warabi emphasises fresh ingredients and masterful techniques, alongside elevated beverage pairings in an omakase setting.

The multi-course menu changes seasonally, using only the highest quality ingredients. Our head chef will guide through a casual yet refined dining experience, channeling 'kappo' which directly translates to ‘cut and cook' and celebrates the chefs' craftsmanship and precise preparation techniques.

 

SUMMER MENU

This season at Warabi, summer arrives in full colour. Drawing on his memories of summers in Kyoto spent river fishing, sitting beneath green canopies, and watching the charcoal smoke drifting over water, Chef Hajime channels the energy of midsummer into two new omakase journeys.

Both menus celebrate seasonal Australian and Japanese ingredients, treated with precision to create a rich union of flavours. Our team will guide you through each course for a generous, and distinctly Warabi omakase experience. 

RYOKU | 11 Courses | Chef's Counter | Tue & Thu | 6pm or 8:30pm | $195pp

An 11-course journey through the flavours of midsummer, Ryoku offers a concise expression of the season, championing richness and union of flavours. Featuring the freshest summer produce with lush greens, fresh seafood, and Australian Wagyu. Guests will experience a chef's selection of sushi, crafted from the day's freshest fish, before concluding with a classic summer dessert featuring azuki, kanten, and sake.

Banryoku, translating to Ten Thousand Greens, describes the vast, lush green landscape in Japan over the warmer months. Our chefs champion seasonal produce to create a signature 14-course omakase experience inspired by their memories of Kyoto in the height of summer. Local and Japanese produce lead throughout, starting with Sakidsuke, a combination of sea eel, foie gras, and fig. With a nod to riverside grilling, fresh seafood takes centre stage, from ribbon fish with peach and kohlrabi to marron with corn and dashi.

A taste of our summer menu, embark on a five-course omakase experience featuring seasonal produce and championing fresh seafood. Delve into a curated selection of dishes crafted to highlight summer's finest ingredients followed by chef's signature hand-made sushi and concluding in a seasonal dessert featuring azuki, kanten, and sake.

BEVERAGE PAIRINGS

In Japan there is a saying ‘Nihonshu wa ryori wo erabanai' which loosely translates that sake does not clash with food. We have curated a beverage list that sits in harmony with our seasonal menu, taking you on a journey across omakase experience.
 
The Naturalist - an exploration of non-alcoholic beverages and cocktails - $68 per person
 
The Realist - a curated selection of sake and wine - $120 per person
 
The Expressionist - an elevated pairing of premium range of sake and wine - $190 per person 
 

THE FINER DETAILS

Due to the nature of our omakase menu, we are unable to cater for certain dietaries including vegeterian, vegan, or allergies to raw fish, shellfish, or rice. For any other dietary restrictions, a minimum of 48 hours notice is required.
 
The Warabi dining experience is suitable for guests aged 12 years and older. 
 
If you would like to review a sample menu, please contact us via email at warabi@whotels.com.
 
All reservations are allocated a two-hour dining window, and there is a 15-minute grace period to hold the table. If arriving after the grace period, a reduced menu will be provided however the cost per person will remain the same. The door will open 15 minutes prior to your reservation time, and food will be served from the commencement of the sitting time. 
 
We require a minimum of 24 hours notice for any cancellation, reduction in diners or change of dates. Thereafter, the full cost of the food menu will be charged per guest.
