彩秋 SAISHŪ

11 Courses | Tuesday - Thursday | $195pp

Inspired by the late harvest season, Saishū highlights the natural tones and contrasts of Autumn in Japan, exploring the brightness of citrus against rich fish and the earthy warmth of game alongside forest produce. Bonito is a key highlight, known for its deep red colour and rich flavour when caught during Autumn season, making it a favourite for sashimi dishes.

秋穂 AKIHO

14 Courses | Friday & Saturday | $285pp

Akiho draws on seasonal flavours that have deepened through colder waters, slow ripening, and the last glimpse of warmer weather. Highlighting the richness of autumn produce, seafood matured by colder waters takes centre stage, including snow crab, known for its unique sweetness. The journey continues with Omi Wagyu, one of Japan's most revered heritage beef lineages, paired with seasonal mushrooms and fresh sansho for an aromatic lift.

BEVERAGE PAIRINGS

In Japan there is a saying ‘Nihonshu wa ryori wo erabanai' which loosely translates that sake does not clash with food. We have curated a beverage list that sits in harmony with our seasonal menu, taking you on a journey across omakase experience.

The Naturalist - an exploration of non-alcoholic beverages and cocktails - $68pp

THE FINER DETAILS

Due to the nature of our omakase menu, we are unable to cater to certain dietaries including vegeterian, vegan, or allergies to raw fish, shellfish, or rice for our Chef's Counter bookings. For any other dietary restrictions, a minimum of 48 hours notice is required.

The Warabi dining experience is suitable for guests aged 12 years and older. 

All reservations are allocated a two-hour dining window, and there is a 15-minute grace period to hold the table. If arriving after the grace period, a reduced menu will be provided however the cost per person will remain the same. The door will open 15 minutes prior to your reservation time, and food will be served from the commencement of the sitting time. 

We require a minimum of 48 hours notice for any cancellation, reduction in diners or change of dates. Thereafter, the full cost of the food menu will be charged per guest for Chef's Counter bookings, and $50 per guest for A La Carte bookings.
